Save-the-chickens chicken salad

This colorful, somewhat crunchy chicken-less salad is perfect for sandwiches or on top of a green salad. With the use of a mini-food processor, you can whip this entire dish up in 10 minutes. 100% plant based. This dish is high in fiber and has no added fat. A perfect combination to lower blood sugar.

1 15 oz can chick peas, drained, rinsed, and somewhat dry

1 8 oz container of garlic hummus

3 medium carrots

1/2 red onion

6 scallions

Ground pepper

Sprouted-grain bread (toasted is my favorite)

Process chick peas, carrots, red onion, scallions in food processor. Combine with hummus. Add pepper to taste. Spread on bread for sandwiches or over a green salad..
